Dehydrated potato flakes are thin, irregularly shaped pieces of dehydrated mashed potato with a moisture content of about 6–8% and a shelf life of 12–24 months. They rehydrate rapidly at a 1:5 to 1:6 water ratio to produce smooth mashed potato and serve as an instant mash base in food manufacturing.
